THE DEL RIO FAMILY
is from Toluca (State of Mexico). They ventured into a family project that seemed crazy to many, but motivated by a common dream and the passion to transmit tradition and culture.
They specialize in the nixtamal technique, which has been around for about 5,000 years. They only use Creole corn, imported directly from producers without intermediaries, this allows them to know the origin and processing of the product.
NIXTAMALIZATION
is the process by which corn is cooked with water and lime, to obtain nixtamal which, after grinding, gives rise to the nixtamalized dough used to make tortillas, tamales, etc.
